Our Story

Growing up on a beach in Far North Queensland. It was easy to fall in love with the ocean and the abundance of food it delivers. Some of my fondest earliest memories involve me walking the mud flats, spear in hand with my friends at low tide hunting and gathering everything from mud crab, flathead, mullet, cockles, razor clams and anything else we stumbled upon, afters sometimes hours of trudging through the mangroves. There is nothing tastier then a mud crab cooked on coals or in a bucket of sea water.

 

I was lucky as a young chef to have had the opportunity to work in some of the best kitchens and hotels in Australia. Places where food matters and food costs went out the window. Places where the ingredient was king. Chefs who thought that even when you are doing a buffet for 150 people the oysters taste better if they are shucked to order. 

 
 

When we decided to open up Blue Manna we wanted to create a place we would like to spend time at. A place to spend time with friends while enjoying friendly service, delicious food and great local wine. And here we are almost 5 years later. Coby’s Asian Twist combined with the best seafood Australia has to offer keeps our customers happy and us busy.

Of course we couldn’t have done it without an amazing partner. That is where the seafood shop comes into play. A partner who knows his seafood, has the right contacts to source the best product possible and help us with the best advice we could ask for.
